The Culinary Dream Team

Two peas in a pod are often used to describe two individuals who are inseparable and work well together. When we use it to describe our food and beverage leaders, not only is it accurate but it’s the perfect pun. Regardless, you would never know that Executive Chef, Nate Catto and Food and Beverage Director, Erick Poulton, have worked together only five months. In that time, they are making waves at The Beach Club, introducing their new menu that highlights their passion; local, sustainable, and of course, delicious food. We suppose a love of food and hospitality is strong enough common ground to form a solid bond in such a short time!

Individually, their charisma is contagious, each having years of experience cultivating their careers. However, when this dynamic duo gets together, the vibration in the room increases and you will find yourself grinning ear to ear.

NATE CATTO

Chef Nate grew up on the West Coast establishing his culinary career in Victoria and Salt Spring Island. Being surrounded by fresh, seasonal, and local fares, every menu curated reflects these values. In each destination that he has worked, Chef focused heavily on fostering relationships with farmers, foragers, and wineries. With passion centered around the guest experience, his goal is to have all customers leave happy and full.

Chef started at The Beach Club in December 2022 and immediately got to work on crafting a menu that represents the unique culinary offerings of Parksville and the West Coast. This new menu features local merchants from all over Vancouver Island including Qualicum Cheese and Vancouver Island Sea Salt. We are also proud to note that all seafood offered is sustainable and Ocean Wise.

ERICK POULTON

Erick brings more than 25 years of industry experience to The Beach Club Resort, working in 5 Diamond/5 Star Hotels and Resorts throughout the world. He started as a teenager, working in the kitchen of local Lower Mainland restaurants. Originally, he desired to be a chef, however, his skill in the front of house became a calling as he took on various leadership roles at luxury resorts and brands including Fairmont, Royal York, and the Algonquin. He also worked at the Intercontinental Hotels Resorts with Three Michelin Star Chef, Pieere Gagnaire, in Dubai.

He brings with him over two decades of hospitality leadership and has now transitioned to beautiful Vancouver Island, finding his new home at The Beach Club Resort. An avid golfer, when not in service or cruising the resort, Erick can be found with his wife, Evgeniia, enjoying the beautiful golf courses on the Island.
